Don't give up on me yet...

This weekend has been insane so far. And it's not even over yet. I promise that I will have a great recipe that was tested and truly good up after this midterm and paper. I haven't decided what it's going to be yet, but I am sure that I will find something fun that CK and I can make together... Who knows, I might even make a video and link you guys to it. We'll see. It all depends on how much work I have to do this week. Please, hang in there!

No new recipes or pictures this week. Sorry guys. I have a midterm on tuesday and i have two quizzes this week. BUT I promise to come up with something super special for the wednesday AFTER my midterm. Oh, I forgot, I also have a paper due on tuesday. sigh.

foodgawker

So, I submitted many many photos to my new food love, foodgawker.com. I submitted my mini aple pi recipe 3 times. 3 TIMES. they don't like the composition of my photo first, then they think that it's too dark, then when I fix that photo they say no because of composition again. WTF? There are so many photos that they accepted of other people's that are worse than mine. If anyone reading this is taking pictures, please try to submit it too? it's ridiculous that they won't accept my pictures.

Cheese-Its and Goldfish

I would like to start this post be saying that I found thew recipe for Cheese-its at http://www.petitekitchenesse.com/2011/10/16/homemade-cheez-its/#comment-3756. You should all check out Carey's blog since I'm not going to post the recipe here. It's hers. I just wanted to try it. and I did.

They're so pretty and they're fluffy! I hope that they get extra crispy.

So... it's pasta

I made pasta for lunch for the two of us. it was an entire pound for 2 people. with cheese tomatoes and basil. but it was sooo good.

I used 1 box of pasta shells
12 cherry tomatoes halved
1 fresh mozarella ball (large)
a lot of basil
balsamic vineagar

cook the pasta and chop the tomatoes and rip up the basil, or chiffonade it if you'd like. once you drain the pasta put everything into the pot and pour as much balsamic as you'd like on top. It's bomb. and simple. and Pretty fast. It took me just the time it took to cook the pasta to get everything ready. :)


First food post: Apple Pie

First things first: CK and I made apple butter and it will be ready in 3 hours.
next: I had this post all written and then as I was trying to add a caption to a picture, the page reloaded. so this is a second go.

We made the cutest mini apple pies and they were DELICIOUS.
Mini Apple PI


Ingredients:
1.5 apples
1 pre-made pie dough ( I'm lazy, ok?)
2 tbsp butter
2 tbsp brown sugar
1 tsp vanilla extract
1 tsp honey
2 tsp cinnamon
1 egg
a tiny bit of sugar (for topping lattice)

Directions:

  1. preheat your oven to 735 degrees and grease a mini muffin tin.
  2. peel and cut the apples into about 1/4 inch. unroll the pie dough and cut rounds to fit into a mini muffin tin. You will not get 24, and should not re-roll the uncut  pastry for another piece, the dough will be chewy. you should get 13 rounds, maybe 14. place your dough rounds into the pan.
  3. dock or poke a few holes in your pie crust and bake at 375F for 7  minutes.
  4. melt butter, sugar, honey, vanilla extract and the cinnamon in a pan and ass the apples. cook until there is almost no liquid left in the pan. spoon apple mixture into the pie shells. you will have some left over dough and you can cut it into little lattice pieces for the top of the pie. 
  5. bake for 12-14 minutes at the same temperature and when they're done, enjoy.
CK and I worked together today and the pies turned out awesome.

Tomorrow's the Day!

So, I'm going to call my love CK from now on, and I will just be SD, or nomnomnom, depends on how I feel.

Anyway, yesterday I went shopping and came home with 12 apples (8 granny smith, 4 Fuji) a bunch of types of cheese, flour, sugar, pie dough, pasta, avocados, tomatoes, half and half, and kosher salt. CK and I will be making cheese-its and goldfish together while I get my apple butter on in my slow cooker. I might also make some handheld apple pies. But I am thinking that I will go buy some lollipop sticks and make pie pops. OR I can make MINI APPLE PIES in my mini muffin pan! We'll see what the man thinks. I might also make a special surprise, but I should ask CK to get 3 more apples for it, do you think he'll do it?

I'm really excited to get back to baking. It's been months since I've done anything fun like a baking marathon.

Oh yeah! I forgot to note that I am also working on two scarves: one for me, and one for puppy (my nickname for my boyfriend). progress report on that is the third row for him (don't laugh, i'm making the rows 5 feet long so i do less of them!) mine is still on like the first row because his is more important, I think... especially since I have like a bajillion crochetted scarves as it is.


Mine is the neglected pink one and puppy's is the brown and blue one.

this month's goals

This month, or what's left of it, I want to make a few things, actually none of which are Halloween inspired, now that I think of it. I want to make homemade cheese-its, goldfish, I'm in the process of making vanilla extract, I want apple butter, pumpkin pie cheesecake, apple hand pies and more. Not to mention that I have some midterms coming up. But I want to make this month worthwhile, since I didn't do diddly this summer when I usually do my experimenting in the ktichen and baking and such. Oh, I'm also in the mood to try canning, I just wish that I could find a place that I could learn how... If anyone in the bay area reading this knows a place or a person who can literally show me how to can, that would be the coolest thing EVER.

I'm sure that i'm talking to myself, but I am nomnomnom, and I love food. Hopefully I won't get bored and I will remember to take pictures of EVERYTHING I make from now on so that I can share with the world. I'm a poor college student, but I love to eat and that means that I tend to go over budget with food, however, I think it's worth it.
